Dinner tasting: Majestic Bay Seafood Restaurant

I was invited to Majestic Bay Seafood Restaurant for a dinner tasting of their menu highlights. Majestic Bay Seafood Restaurant is located below the Flower Dome at Gardens by the Bay and it offers the freshest sea treasures from around the world and a luxurious view of the Marina Bay. The restaurant was run by award-winning Chef, Yong Bing Ngen who is known for his contemporary Chinese cuisine and it is also Majestic Group’s first seafood-themed restaurant.

 
Majestic Bay is all about fresh seafood and that explains why we were greeted by the 'LIVE' seafood water tanks with lobsters, prawns geo-duck and fishes once we entered the eatery premises...
 
 
With a spacious seating capacity of 110, the newly opened Majestic Bay Seafood Restaurant is a wonderful seafood indulgence for gatherings with family, friends and corporate partners. The design of the restaurant seeks to make the most of the impressive waterfront view.
 
 
A private dining room which hosts up to 14 guests is also available for booking.

The prawns are uber fresh and they go well with all the dressing/sauce... I like the salad dressing the best, as it may sound common but I always feel that the most common and simplest thing is always hardest to please as many of us will tend to compare it with others
 
 
Soup of the day (SGD18 for 2-4 pax, SGD27 for 5-8 pax) - Lotus Root Soup
 
 
 
I love the sweet flavorful broth *SLURPS!!* Below were the ingredients used for the soup.
 
 
Steamed, Su Dan Fish, Rice Broth, 'Teochew' Style (Market Price) 

The freshness of the fish enhanced the whole dish and it smelled divine and tasted even better. I love the classic style (steaming) of cooking a fish, as it locks the moisture and fragrance of the fish meat within the broth. The fish meat tasted pretty sweet. The flavorful broth left me craving for more. The only downside was that the fish bones were very fine, so do eat with caution for young children and elders.

The highlight of the night was the LIVE Crabs in Bay’s Signature ‘Kopi’ Sauce (Market price)
 
 
I was pretty excited to try out the Bay’s Signature ‘Kopi’ Crab as Majestic Bay is the only restaurant that currently offers kopi crabs, this idea was conceptualized as a result of Chef Yong‘s greatest love for coffee. This dish is cooked with a special sauce made from a blend of 3 types of coffee beans to produce an optimal aromatic flavor.
 
 
The crab tasted like Garrett’s Popcorn (caramel flavor). This dish is great for people who have a sweet tooth... Apple jam and a small portion of marmalade and orange juice are used in the Kopi Crab sauce to balance the bitterness of the coffee. This special creation is definitely worth a try!!
 
 
The Baked Rice, Assorted Seafood in Chef’s Recipe Sauce (SGD68 for 4-6 pax, SGD88 for 7-12 pax) was my one favorite dish during the food tasting. It was inspired by a popular Portuguese dish he sampled in Macau. The rice came with an extra aroma as it was fried before the baking process. I love the flavorful mushrooms and the Japanese Curry sauce drenched over the rice and the potatoes definitely go well too.
The baked rice was pretty luxurious as it contains quality ingredients like baby abalones, plump scallops, mussels and prawns. Lastly, the rice was topped with cream sauce and baked with mozzarella cheese to form a fragrant outer crust.
 
The Bay’s Signature 'Kopi' Crab is a must-try and the Baked Rice with Seafood in Chef’s Recipe Sauce is a delightful dish, perfect for any occasion.
 
 
We rounded off our meal with the Sweet’s Temptation (SGD20 for 4 pax), a dessert platter which included Black Glutinous Rice Balls rolled in Coconut & stuffed with Yam Paste, Mochi stuffed with Cream, Strawberry & Mango, Deep Fried Red Bean Pancakes and Steamed Custard Buns with Salted Egg Yolk.
 
 
I am a big fan of Salted Egg Custard Buns, and I pretty much enjoyed it as the filling tasted just alright (not too sweet or too bland). I think the Black Glutinous Rice Balls was kinda too heavy to intake as a dessert after a full meal. The Mochi was pretty decent.  

 
Among all 4, I like the Red Bean Pancake best. The feeling of biting the first bite is wonderful, and it was so addictive too that I craved for more after taking my first bite.
